Gelato - Italian Ice Cream

One of the must-do items for travellers in Italy is eating gelato. Italian ice cream is said to be the best in the world by many experts. Gelato is made up of a blend of various ingredients, such as: whole milk, eggs, sugar, and flavouring. Some of the fruit flavours are dairy-free; just fruit and sugar. None of them are sugar-free, so keep in mind you are getting lots of sugar in gelato. There are dozens of gelato flavours available. All will be on display in the gelato stand and will be labelled. Some flavours are creamier: hazelnut, chocolate, coffee, straciatella, coconut, tiramisu, walnut, etc. Some are fruitier: lemon, strawberry, melon, peach, apricot, orange, etc. Some Italian food products use gelato as a main ingredient. These may include ice cream cake, semi-freddos (gelato cake), cassate, Tartufo, and fruit-filled gelato candies. Spaghetti ice cream is a kind of a traditional European dessert, served at many European ice cream shops. Originally, it was made from Italian ice cream gelato, strawberry sauce and grated white chocolate.  There is no spaghetti in Spaghetti ice cream, just vanilla ice cream (the spaghetti), blended strawberries (the sauce), grated white chocolate and grated almonds (the cheese). Not only is it a delicious ice cream or gelato, but it is one of the most wonderful and unusual desserts.

Pizza: The Soul of Italy  - Fill I the blank spaces with relevant wordThere are not too many nations that can say their national dish has become an international phenomenon. Italy has two such ____1, pasta and of course pizza. In Italy pizza falls into two distinct categories: Italian pizza and the rest of the world. Pizza from a Pizzeria is the recognized ___2 shape, made to order and always cooked in a wood fired ___3. The popular pizza Margherita owes its name to Italy's Queen Margherita who in 1889 visited the Pizzeria Brandi in Naples. The Pizzaioli (pizza maker) on duty that day, Rafaele Esposito created a pizza for the Queen that contained the three colours of the new Italian flag: the red of ___4, white of the ___5 and green of the fresh___6. Neapolitan style pizza had now spread throughout Italy and each region started designing their own versions based on the Italian culinary rule of fresh, local ingredients. Regional ____7 are always worth trying such as Pizza Marinara, a traditional Neapolitan pizza that has oregano, anchovies and lots of garlic, Pizza Napoli with tomato, mozzarella and anchovies, Capricciosa with a topping of mushrooms, prosciutto, artichoke hearts, olives and a boiled egg! Pizzas from Sicily can have numerous toppings ranging from green olives, seafood, hard-boiled eggs and peas.  Besides ____8 styles there are several varieties that are popular throughout Italy. Other types of Pizza include:  Pizza al taglio, also known as Pizza rustica, sold everywhere in Italy, usually by weight and often piled with marinated mushrooms, onions or artichokes. This style of pizza is cooked on a sheet pan at street stalls and makes a good quick ____9. Focaccia resembles the earliest pizzas being without tomatoes or cheese but covered in olive oil, caramelized onions and other savory toppings. Do you know how the famous Italian mozzarella cheese is made?

Legend has it that mozzarella was first made when cheese curds accidentally fell into a container of hot water in a cheese factory near Naples...and soon thereafter the first pizza was made! Mozzarella was first made in Italy near Naples from the rich milk of water buffalos. Because it was not made from pasteurized milk and because there was little or no refrigeration the cheese had a very short shelf-life and seldom left the southern region of Italy near Naples where it was made. As cheese technology, refrigeration and transportation systems developed the cheese spread to other regions of Italy. There are two basic ways to make mozzarella: direct acidification of the milk to form the curds or the culture method. In both methods, raw milk is pasteurized and then coagulated to form curds. Once the curds reach a pH of 5.2 they are cut into small pieces and then mixed with hot water and "strung" until long ropes of cheese form. This "stringing of the curd" is unique to cheeses in the "pasta filata" family, such as mozzarella, scamorza and provolone. When the proper smooth, elastic consistency is reached, the curds are formed by machine or hand into balls which are then tossed into cold water so that they maintain their shapes while they cool. They are then salted and packaged. Once strung the curds can be formed into balls of varying sizes or into rolls or loaves filled with sun-dried tomatoes, basil pesto, and other delicacies. Mozzarella can also be smoked. The curds can be mixed with fresh herbs or chilli peppers before forming to flavour the mozzarella. The possibilities and variations are endless. Thanks to the craze for Italian food, high-moisture mozzarella is now readily available all over the world.
